Vietnamese Grilled Eggplant with Garlic Fish Sauce


Ingredients:

Eggplants

Scallions

Olive Oil

Fish Sauce: lime, sugar, garlic, chili

Directions:

Pierce eggplant a few times with a fork

Bake in oven for 1 hour on 450 F

Chop up scallions and blanch quickly in olive oil

Make fish sauce with lime, sugar, garlic and chili

Once eggplant is soft, scoop out the inside with a spoon, pour scallion/oil and fish sauce mixture over

Serve with steam rice!!
