Medi-Veggie: Raw Sunflower Seed Cheese Recipe by Matthew Molcillo

About Seed Cheese:
Different types of seeds and nut combinations can produce unique and savory flavors comparable to cheddar, gouda or feta. When making seed cheese, you can use different blends of nuts and seeds. Some seeds or nuts like sunflower, almond and pumpkin are less acidic than other varieties, like cashew or macadamia nut.
Ingredients:
1 cup sunflower seeds*** (optional: soak for 2 hours or overnight to release tannins)
3/4 teaspoon cayenne
3 tablespoon nutritional yeast
3/4 cup red bell pepper
1 teaspoon sea salt
1/2 cup water
a food processor or blender
***can substitute seeds with cashews, or combine a half cup of cashews and a half cup of sunflower seeds
